PLANTAINS IN SYRUP, PUERTO RICO 
3 lg. plantains, ripe
4 tbsp. butter
2 c. sugar
1 1/2 c. water
1/2 c. white wine
1 tsp. vanilla (substitute 2 sticks cinnamon and 3 cloves)

Peel plantains and make 3 diagonal gashes on each side of the fruit. Melt butter slowly in deep frying pan. Add plantains. Turn heat to moderate and brown about 10 minutes, turning occasionally.

Sprinkle with sugar and pour water carefully over them. Boil for 10 minutes longer. Add wine and flavoring and cook slowly for 20 minutes. Increase heat and boil 20 minutes longer or until syrup thickens. This recipe will serve 6 or it can serve 12.
