RIPE PLANTAIN MINCE PIE 
5 lg. ripe plantains
2 c. string beans, cooked
6 eggs, beaten
3 c. mince meat for stuffing
2 tbsp. oil
Salt to taste

Slice the plantains lengthwise. Fry them until golden. Beat the eggs and add salt to taste. Grease the bottom and sides of a baking pan. Add half of the eggs so as to cover completely the bottom. Arrange half of the fried plantain slice in the pan, spread half of the string beans and then add the mince meat to cover the beans.

Spread the rest of the beans and cover completely with the remaining fried plantains slices. Cover the pie with eggs and bake in a moderate oven for 30 minutes.
