PARTY LASAGNA ROLLS | |
1/2 c. butter 2 lg. onions, chopped 2 garlic cloves, minced 1 1/4 lb. extra lean ground beef 1 lb. ground turkey 16 oz. ricotta cheese 1 c. grated Parmesan cheese 4 egg yolks 1/4 tsp. ground nutmeg 1/2 c. chopped fresh parsley White sauce Herbed tomato sauce 2 (1 lb.) pkg. lasagna noodles 3 lb. Mozzarella cheese WHITE SAUCE: 1/4 c. butter 1/3 c. all purpose flour 1 pt. hot milk (2 c.) 3 c. hot chicken broth HERBED TOMATO SAUCE: 3 tbsp. butter 1/2 c. chopped green onion 2 (15 oz.) cans tomato sauce 1 c. chicken broth 1 tsp. dried leaf basil 1/2 tsp. salt (optional) In a large skillet, melt butter. Add onions and garlic; saute 10 minutes or until onions are very tender. Add ground meats; saute until crumbly and no longer pink. Drain off fat. Place the meat mixture in a large bowl; cool. Stir in ricotta, Parmesan cheese, egg yolks, nutmeg, and parsley; mix well. Set aside. Prepare white sauce and herbed tomato sauce; set aside. To assemble spoon 1/2 of each sauce into bottom of two 13 x 9 inch pans or one 15 x 10 inch jelly roll pan. Cook lasagna noodles according to package directions until tender but firm to the bite; drain. To prevent sticking, lay noodles in a shallow dish with cold water to cover; add 1 teaspoon vegetable oil. Preheat oven to 375 degrees. Lay noodles out flat. Divide meat mixture between noodles; spread over 2/3 of each noodle. Roll up. Stand up filled rolls close together in sauced pans. Spoon remaining white sauce and tomato sauce over rolls. Top with sliced or grated Mozzarella cheese. Bake, uncovered, 45-60 minutes or until heated through and cheese is melted. Makes 20-24 servings. WHITE SAUCE: In a medium saucepan, melt butter. Stir in flour until smooth. Whisk in hot milk and hot chicken broth. Bring to a boil, whisking constantly until thickened and smooth; cool. Makes 5 cups. HERBED TOMATO SAUCE: In a large skillet, melt butter. Add green onion, saute 2-3 minutes or until soft. Add tomato sauce, chicken broth, basil, and salt (optional). Simmer, uncovered, 30 minutes or until reduced and slightly thickened; cool. Makes 5 cups. |
