BANANA BREAD 
2-3 ripe bananas, mashed
2 eggs
1 3/4 c. flour
1 1/2 c. sugar
1/2 c. vegetable oil
1/4 c. plus 1 tbsp. buttermilk
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1 c. nuts (optional)

GLAZE:

Powdered sugar
Milk
1/2 tsp. vanilla

Preheat oven to 325 degrees. Grease and flour 9 x 5 inch loaf pan or 3 miniature loaf pans. Combine all ingredients and mix well. Bake until top is golden brown and splits slightly, about 80 minutes (50 minutes for mini-loaves). Makes 1 loaf. Cover with glaze after bread is cool.
