OATMEAL MOLASSES COOKIES 
1/4 c. butter, softened
3/4 c. sugar
1/4 c. molasses
1 egg
1 tsp. vanilla extract
1 3/4 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. regular oats, uncooked
1 tsp. ground cinnamon
1/2 tsp. ground ginger
Vegetable cooking spray

Cream butter, gradually add sugar, beating at medium speed with an electric mixer, until well blended. Add molasses, egg and vanilla, beat well.

Combine flour and next 5 ingredients in a medium bowl, stirring mixture well. Gradually add flour mixture to creamed mixture, mixing well to combine.

Drop dough by tablespoonfuls, 2 inches apart on a cookie sheet, coated, with cooking spray. Bake at 350 degrees, for 10 minutes or until lightly browned. Cool slightly on cookie sheets and place on wire racks. makes approximately 32 cookies.
