ORIENTAL CHICKEN & CASHEWS 
3 tbsp. oil
2 boneless chicken breasts, skinned & slices (about 1 - 1 1/4 lbs.)
2 cloves garlic, finely chopped
2 tbsp. soy sauce
1 tbsp. sherry
1 tbsp. cornstarch
1/4 tsp. ground ginger
1 med. pepper, cut into sm. chunks
1/2 c. cashew nuts

Set microwave power select at High. In baking dish heat oil 2 1/2 to 3 minutes. Meanwhile, combine chicken, garlic, soy sauce, sherry, cornstarch and ginger. Add to dish and heat 3 to 4 minutes, stirring twice. Add green peppers and cashews and heat, covered at High 2 1/2 to 3 1/2 minutes or until tender. Good over rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
