COCONUT POUND CAKE 
1 1/2 c. Crisco
2 3/4 c. sugar
6 lg. eggs
3 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 c. coconut

Cream Crisco and sugar well. Add eggs, one at a time, beating well after each addition.

Sift flour, baking powder and salt together and add alternately with milk, beginning and ending with flour. Add coconut. Pour into a greased and floured tube pan.

Bake at 325 degrees for 1 hour and 20 minutes, or until done.

CREAM CHEESE ICING:

8 oz. cream cheese
1/2 stick butter
1 lb. powdered sugar
1 tsp. vanilla

Beat cream cheese and butter until smooth. Beat in powdered sugar and vanilla.

Spread on cooled cake.
