PUMPKIN COOKIES 
2 c. brown sugar, packed
2 c. canned pumpkin
1 c. salad oil
2 tsp. vanilla

Blend and mix together.

2 c. raisins
1 c. chopped nuts

Sift together:

4 c. flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. each salt, cinnamon & nutmeg
1/2 tsp. ginger

Mix together first 4 ingredients. Add sifted flour and spice mixture. Mix well. Add 2 cups raisins and 1 cup chopped nuts. Drop by teaspoon on cookie sheets and bake at 350 degrees for 12 to 15 minutes. Makes approximately 7 dozen.
