KAREN'S PUMPKIN COOKIES | |
1 (16 oz.) can cooked pumpkin 3/4 c. oil 3 c. flour 1/2 tsp. salt 1 tbsp. milk 1/2 c. chopped pecans (optional) 2 tsp. cinnamon 1 1/2 c. sugar 2 eggs 3 tsp. baking powder 1 1/2 tsp. baking soda 1 (12 oz.) pkg. semi-sweet chocolate chips 1 1/2 tsp. vanilla Mix pumpkin, sugar, oil, eggs, and vanilla. Dissolve the baking soda in the milk. Add to pumpkin mixture. Add all dry ingredients and mix well. Add nuts and chocolate chips last. Drop by tablespoon on ungreased cookie sheet. Bake at 375 degrees for 10 to 12 minutes. This is a good alternative for chocolate chip cookies. Also, lots better for kids. Pumpkin is loaded with Vitamin A and since liquid oil is used instead of solid shortening or butter, the cholesterol level is lowered. You can also eliminate egg yolks if you wish for even lower cholesterol. |
