AUTUMN PUDDING 
3 c. cooked sweet potatoes, mashed
1 c. sugar
1/2 tsp. salt
2 well-beaten eggs
1/2 stick butter
1/2 c. milk
3 tsp. vanilla

Mix the ingredients for the casserole together and place in a 2 1/2 quart casserole.

TOPPING:

1 c. brown sugar
1/3 c. flour
1 c. broken pecans
1/2 stick butter

Mix the ingredients for the topping together and spread over the casserole. Bake uncovered for 30 minutes at 350 degrees. Especially good for the holidays. Serves 4-6.

VARIATIONS:

1. Reduce vanilla to 1 teaspoon, substitute orange juice for milk, add 1 tablespoon grated orange rind.

2. Reduce vanilla to 1 teaspoon. Add 1 (8 1/4 ounce) can drained crushed pineapple.

3. Add 1/2 teaspoon nutmeg and 1/2 teaspoon cinnamon.

4. Add 1 cup coconut to either filling or topping.
