BEST EVER CHEESE CAKE 
CRUST:

8 tbsp. melted butter
4 tbsp. sugar
2 c. graham crackers
1 tsp. cinnamon
1 tsp. nutmeg

Make a regular graham cracker crust and use a big 14" spring form pan. Mix and press onto bottom and as much of the sides as possible.

CHEESECAKE:

3 (8 oz.) pkgs. cream cheese
5 eggs
1 c. sugar
1/2 tsp. vanilla

Whip cream cheese until creamy, add eggs, one at a time, beat well. Add sugar and vanilla. Pour slowly over crust. Bake approximately 50 minutes at 275 degrees (maybe longer until firm looking). Shut off oven. Keep cake in for 2 more hours.

TOPPING:

2 c. sour cream
2 tbsp. sugar
1 tsp. vanilla

Mix and spread topping over cooled cake. Return to oven and bake for 15 minutes. Cool completely at room temperature. Excellent as is or with fruit topping.
