POLENTA 
1 lb. sausage or any meat
1 lb. mushrooms or lg. can mushrooms
Any basic meatless Italian tomato sauce
1 c. corn meal
1 c. cold water
3 c. water

Cook meat slowly until done and mushrooms cook until done. Add to sauce. Let simmer, meanwhile bring to boil 3 cups water, 1/2 teaspoon salt. Gradually stir in 1 cup cold water; continue boiling, stirring constantly until thick. Could lower heat. Cook slowly, about 10 minutes. Place on platter and pour sauce over cornmeal. 4-6 servings.
