RED PEPPER RELISH | |
24 sweet red peppers, halved and seeded 7 med. onions, halved 3 c. sugar 3 c. vinegar 2 tbsp. salt Slice onions and peppers thinly, or use coarse blade to grind both, reserving vegetable juices. In 4-6 quart kettle combine reserved vegetable juices, peppers, onions, sugar, vinegar and salt. Bring to a boil, then reduce heat and simmer for 30 minutes. Pour into hot jars, leaving 1/2 inch headspace. Adjust lids and process in boiling water bath 15 minutes for half-pints. Makes 10 half-pint jars. |
