FRUIT CAKE 
1 (11 oz.) pkg. pecans (or more)
1 (8 oz.) pkg. dates (or more)
1 (6 oz.) pkg. red, yellow, or green candied pineapple
1 (8 oz.) pkg. candied cherries (red and green)
1 pkg. apricots (optional - may substitute)
1 c. Bisquick mix
3 eggs
1/2 tsp. vanilla

Mix thoroughly. Leave nuts and fruits whole. Spread evenly in greased, foil lined pan (9 x 5 x 3 inches). Bake 1 hour 45 minutes in a 300 degree oven. Store in a cool place or freeze. Can vary and substitute fruits, red, or green cherries. Garnish it well.
