MEXICAN TUNA PIE 
2 med. cooked potatoes, mashed
10 olives, finely chopped
8 smashed capers
2 med. fresh tomatoes, seared
Red salsa per your taste
1 med. onion, chopped
2 cans tuna with juice, water packed

In bowl, mix potatoes with chopped olives and capers. Finely chop the peeled seared tomatoes and add to mixture with the remaining ingredients.

Put ingredients in a double pie crust and bake at 375 degrees for 50-55 minutes or until crust is done.
