APPLE - PECAN CAKE 
3 lg. eggs
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 3/4 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
4 c. peeled, chopped apples
1 c. chopped pecans

Beat eggs at medium speed until thick and pale. Gradually add sugar, beating until blended. Add oil and vanilla; beat at low speed until blended.

Combine flour and next 3 ingredients; add to beaten mixture, stirring until blended. Stir in apples and pecans.

Pour batter into a greased and floured 10-inch tube pan. Bake at 350 degrees for 1 hour and 25 minutes or until wooden pick inserted in center comes out clean. Cool cake in pan for 5 minutes. Remove from pan and cool completely. Yield: one 10-inch cake.
