ITALIAN RICOTTA CHEESECAKE 
1 1/2 lbs. Ricotta cheese
1 lb. Philadelphia Cream Cheese
1 1/2 c. sugar
6 eggs
6 tbsp. flour
1 tbsp. vanilla
1 tbsp. lemon juice
Any fruit topping (optional)

Mix cheeses together at room temperature.

Use 13x9 springform pan. Grease and flour pan. Bake in 350 degree oven for 1 hour. Turn oven off and let cake stay in oven for another hour. Top with any fruit topping. Cake may be frozen for future use.
