SPRING CHICKEN SALAD 
Approximately 3 c. diced chicken
1 med. onion (red or Vidalia during season)
1/4 c. chopped pecans
1/4 c. diced celery
1+ tsp. chopped sweet pickles
2-3 tbsp. mayonnaise
1/4 tsp. salt
1/4 tsp. coarse pepper (black)

Mix all ingredients and serve on lettuce with crackers or toast. Yield: 4 servings.
