BERUEKS FROM TURKEY 
Pie dough for 2 crust pie
1/2 lb. Feta cheese (or Gruyere)
1 tbsp. butter
1 1/2 tbsp. flour
1/4 c. milk
Salt and pepper to taste

Make a thick cream sauce with butter, flour, and milk. Cut cheese into small pieces and add to cream sauce, cooking until cheese melts and mixture thickens. Pour mixture onto a platter to cool. Chill. Form into small sausage shapes. Roll out pie dough very thin. Cut into 2 inch squares. Place cheese sausages in the middle of the squares and fold squares to make triangles. Deep fry in very hot fat. Serve hot or cold. Can be prepared in advance and fried when needed or may be fried and reheated. They may also be frozen. Makes 36.
