LEMON CURD 
2 lg. lemons
1 c. sugar
1/2 stick butter
3 eggs

Great lemon peel of 2 lemons. Add lemon juice from the lemons and sugar and butter in top of a double boiler. Melt sugar and butter over hot water, stirring well. Beat eggs well and pour through a strainer into sugar mixture. Cook over moderately high heat until good and thick, stirring constantly. Store covered in the refrigerator. Mixture thickens when cool.

This makes a delicious pie filling. Pour into cooked pie crust and add meringue. Brown at 350 degrees. Or, it can be used as a filling in a cake. Or, it is a delicious filling in tiny little meringues for a party.
