CHEESE RUGELACH 
1/2 lb. butter
1/2 lb. cream cheese
1/4 lb. confectioners' sugar
1 1/2 c. flour

1. Knead dough until it clears bowl, adding more flour if needed. Roll out to 3/8 inch thickness. Spread with apricot jam and chopped nuts. Roll in jelly- roll fashion and cut into slices 1/4 inch wide. Put on cookie sheet, lined wit brown paper, brush each slice with beaten egg and sprinkle a little sugar on each. Bake in 375 degree oven 15-20 minutes until golden brown. Remove from oven and loosen with knife immediately - OR -

2. Roll out and cut into 3 inch squares. Put 1/2 teaspoon of red jam or orange marmalade in center and close 2 opposite corners over filling. Put on brown paper-lined cookie sheet. Brush with beaten egg and bake at 375 degrees, 15-20 minutes until golden brown. Remove paper immediately and sprinkle with fine sugar.
