MY OWN VEGETABLE SALAD 
2 lg. green peppers, thinly sliced
1 lg. purple onion, cut in 1/2 and sliced thin
2 lg. Italian or reg. tomatoes, cut very sm.
1 lg. cucumber, diced
1 lg. or 2 med. carrots, sliced with potato peeler
2 lg. cans sm. pitted black olives, drained and rinsed
1 tbsp. chopped garlic
Lettuce, optional
1 tbsp. oregano
Season to taste

Mix all ingredients together thoroughly. Add Italian dressing and let set until ready to use. Best when very cold. This should serve 6-8 people. Enjoy.
