NEW MEXICO STEW | |
2 lbs. stew meat or round steak, cut in small pieces 5 or 6 potatoes, diced 6 or 8 carrots, diced or sliced thin 1 or 2 cans chopped green chilies or fresh peeled ones 1 1/2 lbs. bulk pork sausage, crumbled Salt & pepper to taste Salt and pepper beef and brown in a little oil in a skillet. Put a layer of beef in crock pot, next a layer of vegetables, salt and pepper, a layer of green chilies, a layer of crumbled sausage. Continue layering until ingredients are used. Put lid on crock pot and turn on high until it starts to boil then turn to low and simmer 8 to 10 hours. Don't remove lid and don't stir while cooking. The sausage helps give a distinct taste so don't omit and bulk sausage is best but roll sausage will work. Use 1 or 2 cans or pepper to suit your taste. |
