CHICKEN PROVENCAL FOR ONE 
1 (6 to 8 oz.) boneless chicken breast
2 tbsp. oil
2 cloves garlic
1 diced fresh tomato
1 tsp. fresh parsley
1/8 lb. butter
1/2 c. dry white wine

Flour and saute chicken in oil until golden brown, about 8-10 minutes on each side. When done, add rest of ingredients. Reduce sauce slowly for about 10 minutes.

This is a per person recipe. May be doubled, tripled, etc. for additional servings.
