CARROT FRITTERS 
2 lbs. carrots
1 c. sugar
1 c. flour
2 eggs
2 tsp. vanilla extract
2 tsp. baking powder

Wash and peel carrots. Slice and boil carrots until tender. Drain carrots and mash with potato masher until mushy. Combine all ingredients and mix well into carrots. Spoon out and fry in fry pan of hot oil until golden brown on both sides. Makes approximately 16-18 fritters.
