ZUCCHINI BREAD 
3 c. self-rising flour
3 1/2 tsp. cinnamon
3 eggs
2 c. sugar
1 c. oil
2 c. grated (peeled) raw zucchini
2 tsp. vanilla
1 c. chopped pecans or walnuts

Combine flour and cinnamon. Beat eggs until light. Stir in sugar, oil, zucchini and vanilla. Add dry ingredients and then the nuts. Pour into greased pans. Bake in a 350 degree oven for 50-60 minutes. Makes 2 loaves.

Tube pan - 325 degrees for 50-60 minutes; muffins - 400 degrees for 15-20 minutes. Freezes great. You can mix this up with a whisk!
