APPLE NUT BREAD 
1/2 c. packed, shredded carrots
1 c. applesauce
1/2 c. corn oil
1 tsp. vanilla
2 eggs, beaten
3/4 c. sugar
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. chopped walnuts

Preheat oven to 325 degrees. Grease and flour a 9"x5"x3" loaf pan.

Combine carrots, applesauce, oil and vanilla in bowl. Add eggs and sugar, mixing all ingredients together. Mix dry ingredients and nuts together. Stir into applesauce mixture. Mix only until ingredients are blended. DO NOT OVERMIX. Pour into pan, spread evenly. Combine 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle over batter. Bake 1 hour or until wooden pick inserted in center comes out clean. Bread should crack down center. Remove from pan and cool.
