ASPARAGUS ITALIAN STYLE 
1 bunch fresh asparagus
1/2 c. good olive oil
1/4 c. water
1/4 c. tarragon vinegar
Salt and pepper, to taste

Cut the asparagus into pieces and boil until tender-crisp. Combine the olive oil, water and vinegar in a small saucepan and boil for about 5 minutes. Pour over the asparagus and season with salt and pepper. This is also very good as a cold dish.
