CARROT COOKIES 
3/4 c. shortening
3/4 c. sugar
1 egg
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon flavoring
1 c. cooked, cooled mashed carrots
2 c. flour
2 tsp. baking powder
Confectioners' sugar
Orange juice

Cream shortening and sugar. Add egg, salt, flavorings, carrots and mix well. Add flour and baking powder. Drop on greased cookie sheet. Bake at 400 degrees for 10-12 minutes. When cooled, frost with mixture of confectioners' sugar and a little orange juice.
