CARROT COOKIES 
1 c. shortening
3/4 c. sugar
2 eggs
1 c. mashed cooked carrots
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 tsp. lemon extract or juice of 1 lemon

Cream shortening, add sugar and mix well. Add 2 eggs and mashed cooked carrots. Sift together flour, baking powder and salt and add to first mixture. Add vanilla and lemon flavoring or juice. Drop on cookie sheet and bake at 375 degrees.

FROSTING:

1 orange rind and juice
1 c. powdered sugar (or enough for dipping)

Make a thin mixture and dip top of cookies in frosting.
