BRAISED CHICKEN | |
1 broiler/fryer (2 1/2 lb.) cut up 1 lg. onion, cut in wedges 1 lg. rib of celery, sliced 1 tsp. thyme 1 bay leaf 2 tbsp. oil & butter 3 med. potatoes, quartered 1 tsp. salt 1/4 tsp. pepper 1 c. chicken broth 1 1/2 lb. fresh cut green beans or 1 pkg. frozen beans, thawed In a large skillet or electric fry pan, brown chicken in oil and butter until golden. Add onion, potatoes, celery, salt, thyme, bay leaf and broth. Bring to a boil, reduce heat, cover and simmer 30 minutes. Add beans, cover and cook about 20 minutes. Serves 4. |
