PEACH JAM 
3 lb. fully ripe peaches
1 (1 3/4 oz.) pkg. fruit pectin
5 c. sugar
1/4 c. lemon juice

Combine chopped peaches, juice and pectin in very large saucepan or dutch oven. Place over high heat and bring to full rolling boil, stirring constantly. Immediately add all sugar and stir. Bring to full rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat, skim off foam. Ladle into hot sterilized jars, seal at once.
