SUMMER PEACH JAM | |
5 lb. firm ripe peaches 3 tbsp. lemon juice 5 c. sugar 1. Wash, peel and pit peaches. Slice peaches into small pieces about 10 cups. 2. Place peaches, lemon juice and sugar in large bowl and sit for 1 hour. 3. Transfer peach mixture to 8 quart pot and simmer until sugar is dissolved. Bring to full boil. 4. Boil for about 25 minutes until mixture nears the jell point. 5. Remove from heat and skim off foam with metal spoon. 6. Put into clean hot jars leaving 1/2 inch head space and seal. 7. Process in boiling water bath 10 minutes. Yield 8 half pints. |
