SUNNY PEACH JAM 
6 c. sugar
4 c. diced peeled freestone peaches
Grated peel of 2 oranges
Grated peel of 1 lemon
1/4 c. lemon juice
1 (2 1/2 oz.) pkg. powdered pectin
1/3 c. maraschino cherries (optional)

Measure sugar and set aside. Crush diced peaches in large kettle; stir in grated peels, lemon juice and pectin. Heat quickly to boiling, stirring. Add sugar, stirring constantly.

Bring to rolling boil; boil 4 minutes. Add cherries. Remove from heat and stir and skim for 5 minutes to plump the pieces of fruit so they will not float. Ladle into hot sterilized jars and seal.
