CHICKEN CELESTE 
1/3 c. flour
1 1/2 tsp. salt
1/8 tsp. white ground pepper
1/4 tsp. Hungarian paprika
1/4 c. shortening
3 lbs. skinless chicken breast
1 c. onions, chopped
1 c. dry sherry
1/2 c. water
1/2 c. mayonnaise
1 c. sour cream
2 tbsp. chopped parsley
Rice

Mix together flour, salt, pepper and paprika. Coat chicken in this mixture and brown in shortening. Add onions, dry sherry and water. Simmer for 1 hour. Remove chicken, blend 1/2 cup mayonnaise and sour cream in pan juice. Add parsley. Heat, do not allow to boil. Serve over chicken on bed of rice.
