CHICKEN IN WHITE SAUCE 
Vegetable oil spray
12 pieces chicken, about 3 1/2 lbs., skinned, all visible fat removed
1/4 c. Madeira or port wine or homemade chicken stock
2 tbsp. minced fresh sage or 1 tsp. dried sage
2 tbsp. minced fresh thyme or 1 tsp. dried thyme
3 green onions with tops, thinly sliced
1/4 c. finely chopped fresh parsley
1/4 tsp. salt (optional)
Freshly ground black pepper to taste
1 1/2 c. White Sauce

Preheat oven to 350 degrees. Spray a nonstick skillet with vegetable oil spray. Heat skillet over medium-high heat, add chicken pieces a few at a time and lightly brown on all sides. Remove pieces to an ovenproof casserole or Dutch oven. Repeat process with remaining chicken. Pour wine or stock over warm chicken pieces, toss to cover and allow to stand for 10 minutes.

Mix herbs, onions, parsley and seasonings into White Sauce. Pour over chicken pieces. Cover and bake 45 to 60 minutes, or until chicken pieces are tender.

If making ahead, refrigerate; reheat before serving. Serves 6. 2 pieces chicken per serving. This is a great dish for entertaining. You can even make it a day ahead of time.
