STUFFED MANICOTTI 
1 lb. ground beef or turkey
1 sm. carton Ricotta cheese
1 c. cottage cheese
1/2 c. Parmesan cheese
1/2 c. Mozzarella cheese, grated
2 eggs, beaten
1 box manicotti shells
1 lg. jar spaghetti sauce

Brown meat; add favorite seasonings. Drain; set aside. In large bowl, mix all of the cheeses and eggs. Add the meat; stir together and set aside. Drop noodles in boiling water (a few at a time) for 1-2 minutes just to soften noodles. Remove from pan and fill each noodle with stuffing mix. Arrange in a straight line in a 9 x 13 inch baking dish. Pour spaghetti sauce over all. Sprinkle with Parmesan cheese. Bake, uncovered, at 350 degrees for 20-30 minutes (until bubbly). This can be made in a variety of ways: With or without meat, with chopped zucchini or spinach, or with only cheeses. Try them all!
