POTATO CASSEROLE 
2 lbs. cooked, diced potatoes
1/2 c. chopped onion (or 1 tbsp. dried minced onion)
1 tsp. salt (optional)
1/4 tsp. pepper
1 can cream of onion soup, condensed (or other creamed soup)
1 pt. non-fat yogurt or reduced fat sour cream
1 c. shredded low-fat Cheddar cheese
3/4 c. crushed whole grained cereal flakes

Saute onion until tender. Combine all ingredients except flakes. Spray 9x13 casserole with cooking spray. Spread potato mixture evenly in casserole. Sprinkle crushed flakes on top. Bake at 350 degrees for 45 minutes.
