SPINACH ALBERTI 
1 pkg. frozen, chopped spinach, thawed
2 eggs
1/2 pt. sour cream
1/2 pkg. onion soup mix; mix well before dividing beef bouillon; may be substituted
4 oz. shredded cheddar cheese
1 sm. onion, diced
2 tbsp. butter
1/4 tsp. pepper
Bread crumbs

Mix first 5 ingredients. Saute onion in butter with pepper; add to mixture. Place in casserole dish; sprinkle with bread crumbs. Bake at 325 degrees for about 1 hour. Remove lid and bake additional 15-25 minutes, until top is brown.
