ELEGANTLY SCALLOPED POTATOES 
6 med. potatoes
2 c. cheddar cheese, shredded
1/4 c. butter
1 1/2 c. sour cream
1/3 c. chopped onion
1 tsp. salt
1/4 tsp. pepper

Boil potatoes with skin. Cool, peel and cut into cubes. In saucepan over low heat combine butter and cheese; stir until almost melted. Remove from heat and add remaining ingredients. Fold in potatoes and put in a greased 2 quart casserole. Bake 25 minutes at 450 degrees. Can cover with buttered bread crumbs before baking. Also, I usually use Velveeta cheese.
