POTATO TURNIP PANCAKES 
2 c. mashed potatoes
1 c. mashed turnips
1/2 c. mashed carrots
1/2 c. chopped celery
1/2 c. chopped onion
2 eggs, unbeaten
6 tbsp. flour
Salt and pepper to taste
1/2 c. mayonnaise
1 (7 oz.) can of tuna, include the fluid from the can of tuna
1 c. corn flakes

Mix all ingredients well, then drop mixture from tablespoon into skillet containing hot fat. Flatten each cake with back of tablespoon, or flour hands, then make into cakes. Fry to a deep, golden brown on each side. Makes 16 to 20 pancakes.
