CRANBERRY MUFFINS | |
1 3/4 c. all purpose flour 3/4 tsp. salt 1/3 c. sugar 2 tsp. double-acting baking powder 2 eggs 1/4 c. melted butter 3/4 c. milk 1 1/4 c. fresh cranberries that have been frozen Sift together dry ingredients. Beat eggs in separate bowl. Mix eggs, milk, and butter to dry ingredients in a few swift strokes. Batter should be lumpy. Fold in frozen cranberries. Fill well greased muffin tins 2/3 full. Bake in preheated 400 degree oven for 20-25 minutes. |
