CRANBERRY MUFFINS 
1 c. chopped fresh cranberries
1/2 c. sugar
2 c. flour
1 tbsp. baking powder
2 tbsp. sugar
1 tsp. salt
1 egg
1 c. milk
2 tbsp. shortening, melted
1 tbsp. orange rind
Nuts, if desired

Combine cranberries with 1/2 cup sugar and let stand while preparing remaining ingredients. Sift flour with baking powder and sugar. Beat egg with milk; add shortening and orange rind; add to dry ingredients and stir until moistened. Stir in cranberries with the last few strokes. Pour in greased muffin pans. Bake at 400 degrees for about 25 minutes.
