SOUTHERN TEA CAKES 
1 c. unsalted butter
1 3/4 c. sugar
3 egg whites
1/2 c. milk
1/2 tsp. vanilla extract
3 c. self-rising flour

In a mixing bowl, cream together butter and sugar. Beat in egg whites. Add milk and vanilla; beat well. Stir in flour; mix well. Drop by tablespoonsful 2 1/2 inches apart onto greased cookie sheets. Bake at 350 degrees for 15-20 minutes. Yield: About 3 dozen.
