BUTTERSCOTCH BROWNIES 
1 c. dark brown sugar, firmly packed
1/4 c. safflower oil or Mazola oil
1 egg unbeaten
1 tsp. vanilla
1/2 c. walnuts, coarsely chopped
2/3 c. sifted cake flour
1 tsp. baking powder
1/2 tsp. salt

Preheat oven to 350 degrees. Grease 8 x 8 x 2 inch pan with crumbled paper towel dipped in oil. Combine brown sugar and oil, use small electric mixer. Add unbeaten egg and mix well; add nuts and vanilla. Sift together cake flour, baking powder and salt.

Fold into sugar mixture, stirring only until smooth and well blended. Spread evenly in pan and bake 25-30 minutes. Cut into 16 squares while still warm. Dust lightly with confectioners sugar when cool.
