BAKED LEMON PUDDING (EA) 
2 egg yolks
1/2 c. sugar
2 tbsp. flour
1/2 tsp. salt
1/2 c. Pet evaporated milk
1/2 c. water
2 tsp. grated lemon rind
2 tbsp. lemon juice
2 stiffly beaten egg whites

Beat egg yolks slightly in a 1 or 1 1/2 quart bowl. Add and mix thoroughly sugar, flour and salt. Stir in gradually milk and water. Then mix in lemon rind and juice. Fold in beaten egg whites and pour into greased baking dish, large enough to hold 4 cups. Set in a pan containing about an inch of hot water. Bake until top is light brown and mixture is firm, about 50 minutes. Serve warm or cold. Serves 4.
