BAKED LEMON PUDDING | |
1/2 c. sugar 1 c. flour 1/2 tsp. baking powder Pinch of salt 2 eggs, separated 1 tbsp. grated lemon rind 3 tbsp. lemon juice 1 1/2 tbsp. butter, melted 1 1/4 c. milk 1. Sift together 1/4 cup sugar, flour, baking powder and salt. 2. Beat the egg yolks until light. Add grated lemon rind, lemon juice, melted butter and milk. Beat well. Stir in the sifted dry ingredients and beat until smooth. 3. Beat the egg whites until stiff. Beat in the remaining 1/4 cup sugar. Fold into the lemon mixture. 4. Pour into a well buttered oven proof dish in a pan of boiling water. Cook in a 350 degree oven for about 45 minutes. Serves 6. |
