MANDARIN ORANGE/PINEAPPLE
DELIGHT CAKE
 
Cake:

1 box Duncan Hines butter cake mix
4 eggs
1/2 cup Crisco oil
1 (13 oz.) can mandarin oranges with juice

Topping:

1 (8 oz.) container Cool Whip
1 sm. pkg. instant vanilla pudding
1 (20 oz.) can crushed pineapple, drained

Mix cake mix, eggs, oil and mandarin oranges, undrained. Pour into greased and floured 2 or 3 (8-inch) round cake pans. Bake at 350°F for 45 minutes. After cake is cool, frost with Cool Whip, pudding and crushed pineapple mixed all together.

I likde to try out 'different' cake recipes, so one day I thought," i wonder what a pineapple orange cake would taste?, Is there such recipe?" Well, I looked it up and lo and behold..... It was DELICIOUS, past DELICIOUS. Ever since the first time I made it, I haven't been able to eat OR serve any other cake. EVERYONE LOVED IT!!!!

This is one of my favorite cakes to both eat and make. I like calling it my Orange Dreamsicle Cake. Last year I had a church picnic so I made the cake part into cupcakes and frosted them with the frosting. It was a big hit.

To make it more moist and lovely just add a package of dream whip to the cake mix part. You can also use a package of no bake cheese cake mix (not the crust) to the frosting. YUMMY!!!

Made this cake last week but forgot the oranges. Made it again today and still not what I remembered. I did drizzle a bit of pineapple juice over each layer of the cake. Way better than last week but think I should have poked more holes in the cake to make more moist. Long it sits, more moist it gets I think so we'll see tomorrow. Used to love this cake.

Try beating cake mix, eggs, oil and mandarin oranges on medium speed for time required on cake mix box. Orange pieces will barely be seen!! I usually use a 9x13 pan.
