LINCOLN HIGH CHOCOLATE CHIP COOKIES | |
10 lbs. brown sugar 10 lbs. white sugar 11 lbs. butter 11 lbs. shortening 8 oz. baking soda 4 qts. fresh eggs 1 c. vanilla 1/2 c. salt 40 lbs. flour 8 lbs. chocolate chips 1. Cream butter and sugars (brown and white), eggs, vanilla. 2. Mix for 5 minutes on #3 speed (need a strong commercial mixer). 3. Add dry ingredients - flour, baking soda, salt and chocolate chips (last second for chips). 4. Scoop with #24 scoop. 5. On your baking pan try to get the baking parchment paper. Use commercial baking pan or Bake-A-Lite paper (sold anywhere). |
