HOT WATER CORNBREAD 
4 c. white cornmeal
1 tbsp. salt
2 tbsp. sugar
4-5 c. boiling water
2 eggs
Vegetable oil for frying

Mix dry ingredients. Lightly mix with 4 cups boiling water. If consistency is dry and lumpy, add 1-1 1/2 cups cold water; add eggs and mix well. Heat oil in heavy skillet, dip fingers in cold water, take 1/4 cup batter and pat between fingers into 3 inch long ovals. Fry until brown.
